"Mel-de-Cana" is the Portuguese term for the dark sugar cane molases produced on the iland of Madeira. This is a delicious syrup that is used in traditional fritters called "malassadas" just before carnival. However, this is a syrup that can be used in so many a variety of ways - including as a syrup over breakfast cereal, cakes, breads, vegetable salads, fruit salad, ice-creams, doughnuts and so on.
